Finding the right griddle to use on our stove has been...well...like the search for the Holy Grail. I wanted real cast iron and not aluminum...and I had determined that the exact size for the cooking surface had to be 10in x 20in to fit across the burners on our stove. We had used two previous griddles that were not the right size and never fit with the burners. So, they either rocked back and forth (not at all a comforting thing when you are involved with cooking) or didn't rock but were lower on one end than the other.This griddle has everything I need. It fits the stovetop burners nicely and neatly, and it has the cooking surface I need for cooking. It is made of cast iron and easily doubles as some kind of exercise weight. There are no instructions out of the box; however, I have had a long-term relationship with cast iron and know what to expect.Note to the Millennials and Gen Z: Cast iron griddles do not connect to your iPhone via Bluetooth, and you can't control them with your ALEXA device. Cast iron is way better than Teflon non-stick pans if you treat it well. That means it must be SEASONED before you can use it. You must coat the flat side of the griddle with vegetable oil. You put your generously coated griddle in an oven that has been pre-heated to 500 degrees F and LEAVE IT THERE FOR ONE HOUR. After one hour, turn off the oven and allow everything to cool before removing the griddle. When you use it for the first time, be certain to bring it up to cooking temperature before cooking your eggs or pancakes...or, whatever. The food should not stick to the griddle. After each use--DO NOT EVEN THINK ABOUT STICKING IT INTO THE DISHWASHER--gently use a cloth to wash the griddle in hot water. DO NOT USE STEEL WOOL OR OTHER ABRASIVE. Dry and put a light coat of oil on the surface before putting it away. Once your griddle has been nicely seasoned, it should not require a lot of oil or another seasoning to enjoy the non-stick surface.
